You know how much I love cooking with seasonal ingredients. As Autumn is my favourite part of the year, I love cooking with butternut squash/ pumpkin.
1 butternut squash, 100ml olive oil, salt, pepper, dried parsley, paprika and cumin
- Pre-heat the oven to 200ºC
- Clean, peel the butternut squash and take out the seeds (that you can later cook in the oven and have them as a beautiful and healthy snack!)
- Cut the butternut squash, put in the oven tray and season with the olive oil and the other ingredients
- Put in the oven for 45min approx.
It is a perfect dish to accompany fish or meat, or as a started to share! Enjoy!
