Roasted butternut squash

You know how much I love cooking with seasonal ingredients. As Autumn is my favourite part of the year, I love cooking with butternut squash/ pumpkin.

Ingredients:

1 butternut squash, 100ml olive oil, salt, pepper, dried parsley, paprika and cumin

How to:

  1. Pre-heat the oven to 200ºC
  2. Clean, peel the butternut squash and take out the seeds (that you can later cook in the oven and have them as a beautiful and healthy snack!)
  3. Cut the butternut squash, put in the oven tray and season with the olive oil and the other ingredients
  4. Put in the oven for 45min approx.

It is a perfect dish to accompany fish or meat, or as a started to share! Enjoy!
