Pasta vegetariana/ Veggie pasta

Pasta is a MUST to have once a week at home. We normally prepare it with meat but sometimes we just feel like having it only with vegetables, and honestly, it is equally good! (Saying this because I’m a huge meat lover).

You need:

1 onion, 1 carrot, 1 green pepper, 8 mushrooms, Your favourite pasta (enough for 3-4 people), Fresh basil, 1 can of chopped tomatoes (400gr), Olive oil, pepper ,salt, paprika and oregano

How to prepare it?

  1. Heat a dash of olive oil on a pan, chop the onion and add it.
  2. Add some salt and cover the pan with the lid.
  3. Peel and chop the carrot, and add it to the pan. Stir well.
  4. Chop the green pepper and mushrooms (make sure you clean them well), and add them to the pan, as well. Keep stirring well and cover.
  5. Let it cook until the vegetables are soft and then add the chopped tomatoes.
  6. Stir well and let it cool for another 5 min.
  7. In the meantime, boil the pasta with a pinch of salt
  8. Add the fresh basil and a handful of grated cheese, stir again, and ready to serve!

And now it’s “Yummy time”! Enjoy!
